Though i would like you to purchase artisan cheese, this guidelines apply to any cheese. This being Christmas, i have to be a touch more lenient as i want all of you to have a great time.

Rindwashing Vacherin Mont d’Or with brandy.

1 Unwrap the cheese
I have purchased mine with a use by date 6 January. The cheese won’t be too ripe for Christmas.
Unwrap the cheese, set the wooden lid aside for closing after washing.

2 brush gently with brandy wash, i have used Calvados because that what i had, you may want to use another brandy, such as Armagnac, Cognac, whiskey. Cider works well too ( no need to dilute the cider either!)

I did not measure but i use about 4 measures water for 1 measure brandy. You may keep that lovely solution for next wash.

3 after washing, the thin white coat which naturally coats the cheese when wrapped has vanished and gave way to a beautifull yellowish colour much more lively,
It has as well a fantastic alcoholic whiff. I shall repeat the process once a day for three days till The show or Christmas for viewers.

4 put the lid on as it will contribute in maintaining humidity, wrap up the cheese.

5 store for a maturation purpose at a temperature no higher than 13 celcius. If viewers don’t have a garage they may do the same thing from step one, turn the thermostat of the fridge up, still cold but
not damn cold, and put the wrapped cheese in a plastic bag! It is going to be a fragrant fridge as the garage is now.

explaining on which basis i am allowed to mature the cheese, and many others in that manner.

What do i want to do?
Pablo Cabrito, as it comes sliced, slices arranged in a star shape, a rather mild gentle creamy raw goat cheese perfect to start the platter with. Typically 220g, i presume two pieces to purchase.
Waterloo, must be young and still rather firm when purchased so i can easily cut half and prepare with some truffle paste or preserved truffles.
Truffle paste or preserved truffles may be found in many establishments.
I saw the guys at Borough market http://www.dissa.co.uk/truffle-products.html with a great range of truffle products as well as Tartufaia for fresh truffles. Waterloo comes in two sizes a large 700g and a smaller 300g. I ll take two small ones.
Rosemary Manchego will simply be cut up in small sticks and used to decorate platter.
Medium Vacherin Mont d’Or, which i will prepare with a Brandy wash Typically 600g. Purchase one. The guys sell as well some quince paste, one slice of 100g is enough.
Shropshire Blue is a stunning orange blue cheese which i may cut up in triangle xmas tree like pieces, must purchase 500g max.
We will place the usual, carrot, celeri,… selection of veg as last time i came around as they pretty much come standard with platter.
We may purchase pear, apples, fresh berries from any supermarkets. as well as walnuts, hazelnuts in their shell, we ll crack them open live while we talk maybe.
As for bread the usual selection and crackers.
I wondered if you d be OK to purchase those paper leaves i told you. I wanted to be as romantic as it gets and fetch real leaves from the park
though i understand it might be a mission for viewers to do so because a) there might not be many leaves left by Christmas b) one might use

As a side kick to the platter i ll bring along blackberry jam, mirabelle jam and apple compote which i made myself over the past few months.
Some viewers may have prepared their own as i did, i enjoy nothing more than eating food i made over the summer. Let me know if you are OK with me bringing these.
Are you ok if this time i bring my props to make the platter, i am going to work out how to set things up quickly before going live. I have got the props and have been putting my head at
how i want it to be presented for the last few weeks.
I wondered if you would be OK with either delivering the cheese at mine, or maybe allow me to come to the studios before 22 Dec, well before, a week previous
so i can do some cheese prep and looking after so they are top notch on 22 Dec.
Once everything is in place props, cheese, fruits, nuts, jams, leaves the platter will look stunning.
