How to compose a cheese platter?

Before i go forward with buying any cheese, i need to understand my guests, I will be mindful not to buy what I like only, I ll treat myself another day, importantly I need to know how much cheese should i buy?

If I want to have just enough cheese for my event, I usually advise 75 grams up to 100 grams per guest, for special occasions, i.e Christmas, wedding, I will increase that weight. Often some guests decide not to have any cheese, they have eaten enough or simply don’t like it, they usually account for 20% of my total number of guest. Once chosen the weight per guest and finalized the number of guests, I should now have a total weight which will allow me to go forward which making my selection of cheese.

Let us recap: 10 friends are coming for dinner, I bet on 8 of them only to have cheese, i ll be generous and go for 120 grams per head, 8 X 120g= 960g ( to a kilo ), sounds good to me.

Now I will choose the following options:

The single cheese platter: A whole single cheese may be a good choice. It is original and beautiful at once. For a large country lunch, in a rather relaxed atmosphere, you may offer an entire 3kg wheel of Brie de Meaux, a 600g medium Vacherin Mont d’or for every body to dig in, it will look stunning on the table and your guests will not fail to gather around the cheese.

The classic cheese platter: A classic and mouth-watering formula.For example 5 to 7 cheeses issued from different families.

This is an overview of cheese families, cheeses made all over the world will fall in any of these categories.

FRESH ( a fresh goat curd which you can handle safely and flavour maybe, a young white immaculate rindless crottin )

CHEVRE ( The whole family includes any lactic goat cheese, they made in a variety of shape, button, log, pyramid, barrel, they are eaten young ( a few days ) to aged ( a couple of months and more sometimes ) and are either white aged  ( a natural rind usually geotrichum grows on the cheese, I find they have more sharpness ) like Charolais or Stawley. or ash coated ( an ancestral technique, the ash coating protects the cheese, neutralizes surface acidity, creates a more varied rind flora which gives the cheese undergrowth notes) like Valencay, Tymsboro, Cerney .

SOFT WITH WHITE BLOOM ( Camembert de Normandie, Brie de Meaux, Baron Bigod, St Jude or the lush, some would say decadent cream enriched Brillat Savarin, Vignotte, Delice de Bourgogne.

HARD COOKED PRESSED ( Comté, Beaufort )/UNCOOKED PRESSED ( Cantal, Cheddar, Hafod, Manchego )

SOFT WASHED ( Époisses de Bourgogne, Munster, Rollright, Stinking Bishop, Maroilles, Puig.

BLUE VEINED ( Stilton, Roquefort, Kraftkar Word Cheese Awards 2016 winner )

 FLAVOURED ( often a cheese from any of the above categories which has been flavoured such as truffled cheeses or a fresh goat cheese coated in herbs and spices, beware there has been and are some very odds one on the market, cheddar with ketchup to name only one, it was not a success! )

Terroir is as important to artisan cheese as it is to wine! Indeed the geology, geography and climate will determine the flora on which animals graze. This does not apply to any industrial mass produced cheeses made from standardized milk, the only bit of terroir in there is the picture on the cheese! The same applies for seasonality, standardized milk for mass production have taken away any seasonal taste variations ( the aim is to produce something that will be the same from January to December ), seek artisan cheeses and you may notice your cheese will offer different experiences along the year.

The three cheese platter from the same region: This composition allows you to associate all the goodness from the same region.You may for instance want to try the following New Forest platter:

Rosary goat cheese, Lyburn stoney cross, Loosehanger Old Sarum Blue cheese,

Dine with cheese: You may conceive a whole dinner around cheese,it will be an exciting and flavoursome adventure. On the first page, i presented the cheese families, their order respects the flavour crescendo. You may choose three to 5 cheeses per family and serve in the same order. To compliment such a dinner, it is good to provide a variety of breads and finely sliced vegetables of your choice to temper some cheeses.

I personally do my utmost to purchase solely unpasteurized cheeses, this is not to say that some pasteurized cheeses cannot be good, I just made my mission to focus on raw milk cheeses as part of my Food Safety job, there is a lot of unjustified fear associated with those cheeses. https://rindwash.wordpress.com/tag/pasteurized-cheese/

I must give you the following advices:

it may not be suitable to persons with a low immune system, i.e pregnant women, elderly, toddlers. Dairy allergies must not be forgotten either.

Some cheeses contain lysozyme used as an antibacterial, it is an enzyme issued from the egg which may cause allergies to some!
